Review: The Buffer Zone Diet is a fast read about the world of dieting and why we as a society are still not able to figure it all out. Cuellar explains to the novice how his experience with dieting has been an uphill battle, but a winnable battle nonetheless. This book reads more as a memoir, than a self-help book and can be consumed in one sitting. The one major flaw that stuck out for me was his use of Wikipedia as a source for information. I being an educator know the pros and cons of this website and would not use it as my sole source of information. I have never seen it used so extensively and would suggest that he reference the actual sources taken from Wikipedia in the future. However, Cuellar has published other books and is a very reliable source in general, so this did not impact my view of the book. I like the simplicity of his chapters and that he was so brutally honest with his struggle. Overall, this book is highly recommended for anyone who is looking to begin a weight loss program or needs a little bit of motivation in their current endeavors.

Another Oprah Diet

I am not a fan of the any of the Oprah diets for various reasons, but I love finding new and fun recipes. Here is one I thought would be great for Spring.

Florida Grapefruit Salad with Seared Shrimp
Makes 4 servings
Prep Time: 1 hour
Total Time: 90 minutes
INGREDIENTS
8 baby potatoes
3 Florida grapefruits
1 small fennel bulb, thinly sliced (about 1 cup)
1/2 whole cucumber
1 avocado
1 persimmon
4 Tablespoons fresh pomegranate seeds
2 sprigs tarragon
1 head radicchio
1 Tablespoon extra virgin olive oil
12 jumbo shrimp (peeled and de-veined)

DIRECTIONS
Cook potatoes in boiling salted water until very tender.
While the potatoes are cooking, whisk the ingredients for the vinaigrette together in a medium bowl. Cut the cooked potatoes into quarters and put them directly into the vinaigrette while they are hot to infuse flavor.
Zest 2-3 tablespoons of grapefruit peel. Then, peel and segment the grapefruit and place in a strainer over a bowl to save juice for searing shrimp.
Thinly slice the fennel and cucumber. Peel and cube the avocado and persimmon. Peel seeds from the pomegranate. Pluck individual tarragon leaves from the stem. Tear the radicchio into medium-sized pieces. Set all ingredients aside. In a hot sauté °an, sear shrimp in one tablespoon of olive oil. Cook the shrimp approximately one or two minutes on each side.
Add grapefruit zest and reserved juice to pan. Combine shrimp and remaining salad ingredients together, toss and serve.

Marinated Artichokes with Homemade Arugula Pesto Serves 4
Ingredients:
1 lightly packed cup/30 g fresh baby arugula leaves, stems removed
½ cup/65 g freshly grated Parmesan cheese
1/3 cup/50 g pine nuts, toasted
2 garlic cloves
½ cup/100 ml extra virgin olive oil
Salt and freshly ground black pepper
16 quartered marinated artichoke hearts, drained
Additional fresh baby arugula leaves, for garnish Cherry tomatoes, halved, for garnish
Method:
To make the pesto:Place 1 lightly packed cup/30 g of arugula, and the Parmesan, pine nuts and garlic in a blender. With the machine running, slowly add the olive oil and blend until smooth. Season the pesto to taste with salt and pepper.
To serve:
Arrange the artichokes on a platter and drizzle some of the pesto over the artichokes. Garnish with the additional arugula leaves and tomatoes. Serve and smile. Cover and reserve any remaining pesto in the refrigerator for another use.

Gourmet is in my opinion one of the best food magazines offered to us by Conde Nast Publications. Their online resources aren't as good as the in print version, but you can spend hours getting lost in the tons of recipes that are posted on the web. A must read for the cook in all of us!
